When the only vegetables in the fridge are carrots and onions? What do you do then? Yes, when you make fall stew! A week with a lot of cooking has gone hard over an otherwise chock full fridge, and today it was almost devoid of vegetables at home. Crisis? Nope. I call it a challenge! A hungry vegan can their kitchen tricks. togen The starting point was thus an onion and a bunch of carrots. Combined with fresh ginger, coconut milk and the right spices, they were relatively few ingredients for a flavor bomb of a pot with an insolent good sauce! Yes, the sauce was actually so good that we supplied us several times just for that. Had to tilt the pan and make sure to get everything to the last drop. I have therefore adjusted the recipe slightly and increased the amount of sauce compared to vegetables. The finished recipe contains plenty of gravy goodness that you no shame to pour on the plate.
(4 pers) 1/2 kg carrots, sliced (approx 5 adults carrots) 2 yellow onions, coarsely chopped 1/2 cup canola oil 1 large piece of fresh ginger, chopped small (= a good 1 cup) 5 large cloves garlic, finely chopped (= about 1/2 cup) 2 cans coconut milk (= 8 ml) spices: 2 tablespoons paprika 1 tablespoon togen ground cumin 1 tablespoon whole cumin seeds 1 tablespoon turmeric 1.5 tsp salt about 1 pinch chilli powder (to taste) has at the very end : juice of 1/2 lime a small handful of fresh parsley, finely chopped togen 1 Heat the oil in a large saucepan and glossy onions in this. Add the ginger togen and garlic and cook for a further couple of minutes. 2 Pour the coconut milk and add all the spices, bring to a boil. 3 Add the carrot slices and simmer with the lid carrots are barely tender, about 15-20 min. 4 Season with lime juice and stir in the chopped parsley. * Server autumn stew with lime slices next to it, so that each one can squeeze over a little extra acidity on the plate. Hege: I have not tried to make this with soy milk, etc so not sure how it will be then. But for my taste gives coconut milk is the perfect sauce here (LOVE coconut !!) both in terms of flavor and richness. Reply Delete

You have a fantastic blog! Created autumn casserole today and is absolutely chock full - unbelievably good! My son of 10 years came home after eating dinner with a friend, put his face down in the pan with the remains togen and exclaimed excitedly, "Åååh: togen It smells good!" Will not be surprised if the remains are eaten up before the night is over (although I hope that there will be little left for me for lunch tomorrow;)) Will definitely try more of your recipes. It is super good, I lavede it yesterday, and have eaten igen today. Dog brugte I mængde less spices, as I find it so hard ud, but the devil also ud af, that sucks kokosmælken part Smag as neighbor once, I can very well screw up. It smagte dog rigtig togen dejligt alligevel and also my Gaeste was begejstret. Rigtig good weekend. Reply Delete
It was not so much as a drop left in the pot, something so wonderfully well! I heated some sliced Norwegian disco very-apples and had, yummy combo of sweet and sour :) Thanks for a wonderful blog, sorry you are so hungry all of your recipes, I must soon start to jog twice as much after discovering the blog yours! I've tried this one :) Good soup. Is maybe more than a lot with a whole ginger for me (can not remember ...), but it's just adapting my own palates, so it is perfectly fine, it. Next time, I remember having with lime slices on the plate and add something extra acid. Reply Delete
